Description
The cinnamon tree, grown in the tropics, is an evergreen tree that can grow up to 10 meters tall, using the dried red brown bark, one of the oldest known spices. Cinnamon has a very strong smell and its flavor is pungent. As it dries, the bark, stripped of its epidermis, rolls up on itself, forming friable sticks in the form of a pipe. Ground cinnamon has a more pronounced flavor than cinnamon sticks, but it deteriorates more quickly. Use, cinnamon is used in sweet or salty dishes, compotes, mulled wine, soups, meats (lamb) stuffings, pastries, donuts, syrups, creams, cakes, brioches as well as in association with the apple, in the preparation of chocolates and liqueurs, but also in Indian cuisine. Antiseptic powerful, bactericidal, cinnamon has an antiviral and stimulant effect, it is used in infusion or decoction traditionally against colds, flu and digestive disorders.
